Vanilla Biscuits
perfect for decorating

Ingredients:
125g Butter
150g Caster Sugar
1 medium Egg
250g Plain Flour
Pinch Salt
1tsp vanilla Extract (or other flavour)

Stand mixer with beater attachment or a hand whisk
Scales
Lined Baking trays
Clingfilm
Rolling pin & Cutters
Cooling racks
Method:
Line cookie/baking trays with baking paper and set aside.
Cream butter, sugar and salt together until light and fluffy.
Beat in the egg and vanilla.
Add flour a little at a time, mixing after each addition until mixture forms a soft dough.
Wrap in clingfilm and chill in the fridge until firm enough to roll out.
Preheat oven to 160c (fan).
Roll out to 3/4 inch thick and cut into esired shapes.
place on baking tray with a little space in between.
Chill on the trays for 10-15 mins to prevent them spreading too much.
Bake for 15-20 mins or until the edges start to go golden - biscuits should be baked dry but not browned.
Leave to cool on trays before transferring to cooling rack
If decorating with cut fondant this should be applied as soon as the biscuits come out of the oven so prep either whilst the dough is chilling or the trays are baking. Applying fondant to the hot biscuit will let the underside melt to the biscuit without the need for an edible glue or jam.


Notes:
This recipe can be easily doubled with no problems.
Store in air tight container or tin.
Dough can be frozen for up to 3 months or kept in the fridge for a few days.
