Gnocchi
Nat what i Reckon

Ingredients:
3 large (1kg) potatoes (red potatoes recommended but any will work)
160g Plain Flour (add more if needed)
1 Egg
Pinch of Salt
Sage Lemon and Brown butter sauce
2-3 tbsp Butter
handful of sage leaves
1 grated lemon rind
Salt & Pepper
Chili flakes (Optional)

Equipment:
Oven Tray
Saucepan
Frying Pan
Knife
Masher/Spoon/Whisk
Spider strainer
Method:
Preheat oven to 200c (fan)
Place potatoes on a baking tray and cook for 1hr-1.5hr until fully cooked (bake not boil to prevent them being too wet)
Once cooked remove from oven and allow to cool enough to handle
Scoop out the insides into a large bowl and mash until smooth
Sift in flour and add egg and pinch of salt and mix until dough forms
sprinkle flour on bench and knead dough lightly for min 5 minutes (add more flour if it feels wet).
once smooth cut into 4 sections and roll out into logs
Flour your knife and cut your Gnocchi pieces and shape if desired.
Bring a saucepan of water to a boil (add salt)
tip gnocchi into water, once they float they are cooked enough
Remove using a strainer and place straight into frying pan with butter and sage
Cook in frying pan for couple minutes to brown up,
Serve with salt pepper
To make the sauce:
Add butter to pan and melt on low heat
add sage leaves and cook to brown the butter
Add chilli leaves if desired.


Notes:
add anything you want to the gnocchi dough e.g. cheese, tomato, spinach, garlic
