Banana Bread

One of my favourite Mary Berry Recipes made every week.

Ingredients:

  • 100g softened butter

  • 175g caster sugar

  • 2 eggs

  • 2 ripe bananas (mashed)

  • 225g self raising flour

  • 1tsp baking powder

  • 2tbsp milk

  • 100g chocolate chips (optional)

  • 50g chopped walnuts (optional)

  • Demerara sugar (Optional for sprinkling on top)

Basic Cost to make: Approx £2.50

Equipment:

  • Stand mixer with beater attachment or a hand whisk & Bowl

  • Scales

  • Spatula

  • Lined 2lb loaf tin (or 2x 1lb loaf tins)

  • Cooling racks

Method:

  • Place all the ingredients into a bowl and beat for about 2 minutes until well blended.

  • Spoon into the lined tin and bake at 160c (fan) for about 1hr until well risen and golden brown.

  • Allow cool for 10 minutes in the tin, then remove and leave to cool on a wire rack.

Notes:

  • Optional ingredients can be folded in evenly before spooning into the tin.

  • Sprinkle demerara sugar on top before baking for a crunchy topping

  • Bake the 1lb loaf tins for 45-50mins
