Banana Bread
One of my favourite Mary Berry Recipes made every week.

Ingredients:
100g softened butter
175g caster sugar
2 eggs
2 ripe bananas (mashed)
225g self raising flour
1tsp baking powder
2tbsp milk
100g chocolate chips (optional)
50g chopped walnuts (optional)
Demerara sugar (Optional for sprinkling on top)
Basic Cost to make: Approx £2.50
Equipment:
Stand mixer with beater attachment or a hand whisk & Bowl
Scales
Spatula
Lined 2lb loaf tin (or 2x 1lb loaf tins)
Cooling racks
Method:
Place all the ingredients into a bowl and beat for about 2 minutes until well blended.
Spoon into the lined tin and bake at 160c (fan) for about 1hr until well risen and golden brown.
Allow cool for 10 minutes in the tin, then remove and leave to cool on a wire rack.


Notes:
Optional ingredients can be folded in evenly before spooning into the tin.
Sprinkle demerara sugar on top before baking for a crunchy topping
Bake the 1lb loaf tins for 45-50mins
